Chai Tea Porridge with Fig and Hazelnuts

With the cold weather upon us, what’s a better way to start the day than with a yummy hot, tasty, healthy porridge. Everyone has an opinion as to what goes perfectly with porridge, but let’s be honest guys, EVERYTHING goes well with porridge, because it’s a blank canvas: rolled oats in water taste like cardboard, and that’s why it’s a cook’s dream. You can explore a variety of flavours, as you will discover if you continue to follow me this winter. I will be trying out different combinations of flavours and hope for the BEST! Here is my first of hopefully many good ones.
For two people
1 cup rolled oats
1 cup water
1 cup strong chai tea
1 1/2 teaspoons chia seeds
1 fresh fig
Crushed roasted hazelnuts
Honey or maple syrup
In a pot on medium to high heat cook oats with water and chai tea, stir until water has almost evaporated. Remove from heat and stir in Chia seeds.
Place porridge in a bowl, sprinkle coconut, hazelnuts, drizzles honey/maple syrup, pour your favourite milk, enjoy hot!
