Chia Pudding

Like most people, I love good chia pudding. Chia seeds are high in Fibre, a good source of Omega 3 and contain iron and calcium, so I feel like I’m getting a treat and eating healthy at the same time.

I have made a variety of delicious layered vegan chia puddings for you to choose from. I have to say I thought they were delicious and I didn’t think they needed any honey or maple syrup to sweeten them up, but if you want them sweeter, feel free to add honey/maple syrup.

The liquid you use is up to you. I used almond milk but you, you can use water, juice or any type of milk you like. People have a preference as to how firm they like their chia pudding. I don’t like my pudding to be too thick. If you prefer your chia firmer or more runny feel free to play with the ratio.

And unlike cake, it takes 10 minutes to make!


3 cups layered with chia pudding, coconut yoghurt, granola, coated nuts and fruits
 

Ingredients

  • This quantity was enough to make 5 layered chia cups

  • 1/2 cup chia seeds

  • 2 cup almond milk

  • Topping ingredients

  • Granola

  • Fresh fruit

  • Coconut yoghurt

  • Freeze-dried strawberries

  • Yoghurt covered nuts

  • Roasted macadamia sweetened with maple syrup or honey

Method

  1. In a bowl mix the chia seeds and almond milk with a fork until seeds are incorporated into the milk. To avoid any lumps, let it sit for a min or two before stirring again. Make sure there are no lumps before you refrigerate.

  2. Cover the bowl and refrigerate for a couple of hours or overnight. You can refrigerate up to five days.

Chia Breakfast idea 1

Assemble the layers in this order either in a jar or a drinking glass (see photo)

  1. 1/4 cup chia pudding

  2. 1/4 cup granola

  3. 1/4 cup coconut yoghurt

  4. Top with mango slices and blackberries or whatever fruit you like.

Assemble the layers in this order either in a jar or a drinking glass (see photo)

  1. 1 small kiwi fruit cut into circles Placed inside and around the bottom of the vessel

  2. 1/4 cup coconut yoghurt

  3. 4 tablespoons granola

  4. 1/4 cup chia seeds

  5. Topped with your favourite fruit

Chia Pudding Treat

Place in a jar or a drinking glass in the following order (see photo)

  1. 1/4 cup chia pudding

  2. 3 & 1/2 tablespoons granola

  3. 4 tablespoons coconut yoghurt

  4. 4 tablespoons chia pudding

  5. Top with freeze-dried strawberries, yoghurt covered nuts, and sweetened macadamias
