For an extravert I have to say I haven’t been too bad, considering I haven’t seen friends or family while I have been locked up inside for what feels like forever. For those of you who don’t know how it works for extraverts, it’s like this: we love to be around people and we like attention. We love to talk and talk and talk and then talk some more. We love to socialise and to be out and about. So it’s a huge understatement when I say I’m really looking forward to catching up with my book-club girls or going for a walk with my walking partner or doing my favourite thing: going out for a late breakfast on Saturday morning! The first thing I will order will probably be poached eggs, smashed avocado, with spinach and yummy mushrooms and a large soy cap!
Then I would usually force my partner (he doesn’t really love it, but it makes me feel like I’m not really eating that much) to share a toasted sourdough toast with ricotta infused with orange zest YUMBO!
However, I couldn’t take it anymore and I ended up making my own ricotta dip/spread infused with orange zest. Let's face it, one can only live on plain ricotta for so long…..
This wasn’t hard to make and I have overindulged at times. If you love ricotta and are a little adventurous, then give it a go. Make your own toast with the ricotta spread and put your own favourite toppings on it. I would love to see a photo.
Ingredients
1 1/4 cup ricotta
5 tablespoons vanilla yoghurt
2 tablespoons honey
2-3 tablespoons fresh orange juice
1/2 teaspoons cinnamon
1-2 tablespoons orange zest
Method
With the exception of the orange zest, combine all ingredients in a bowl and garnish with orange zest.
I use this as a spread on toast and sprinkle the orange zest on top. I LOVE IT.
If you want to use it as a dip it goes really well with cinnamon pastry sticks.
