The Erez-would-love-this breakfast (aka Quinoa porridge )

This breakfast is vegan and GF

My sister rang to say she wants me to make a nice vegan porridge with a nice subtle flavour, not too many flavours in the porridge. I took on the challenge. For me, it’s a challenge because I love to cook the oats or quinoa or whatever ingredients I use for porridge with more than water! I love to add teas, orange blossom water, coco, coffee, freshly squeezed juice and loads more.

Off I went to the kitchen and opened the pantry, took out the quinoa and looked away as I boiled it in water ONLY! I did add 1 teaspoon of cinnamon and 1/2 teaspoon of vanilla extract. If it was up to me there would be 2 teaspoons of cinnamon 1 teaspoon of vanilla extract and then some… I was allowed to go crazy with the topping so I did!


Once the breakfast was done I gave it to my son to try, I always give it to my family to try…

I made a MASSIVE bowl, probably enough for three people or a couple of gluttons.

Oren took a bite and nothing… took another bite and said OMG Erez would love this (Erez is his identical twin who is currently overseas) and with every single bite he just kept repeating himself Erez would LOVE this, hence the name Erez would love this breakfast.

‘Good to know Erez would love, this but do you like it?’ To which he replied, ‘Yes, I do.’ After he devoured the WHOLE bowl I asked him to rate it out of 10. I got an 8 1/2.


So, without further ado here is the Erez-would-love-this-breakfast breakfast, rated 8 1/2 by one of my top food critics.

Ingredients

  • 1 cup quinoa

  • 3 cups water

  • 1/2 cup dedicated coconut

  • 1 teaspoon cinnamon 1/2 teaspoon vanilla extract

  • 1/2 cup Almond milk (or any milk of your choice)


Topping

  • Strawberries

  • Dry-roasted almonds

  • Macadamia nuts

  • Mango

  • Blackberries

  • Kiwis fruit

  • tChoc buckwheat clusters

  • Ancient grains kickstart

  • Dates

  • Maple syrup

 

Method

  1. Rinse quinoa.

  2. In a saucepan bring water to boil, add quinoa and leave the heat on a medium flame for 20min or until water has been absorbed.

  3. Stir in cinnamon and vanilla extract.

  4. Add the coconut and mix with quinoa until well combined.

  5. Stir in coconut.

  6. scoop one cup of quinoa porridge add 1/2 cup milk(or more depending on what consistency you want).

  7. Serve with a topping of your choice.
