Ingredients
Bottom of cake
1 large granny smith apple
1-2 tablespoon brown sugar
1-2 teaspoons water
¼ teaspoon cinnamon powder
Cake
3 eggs
½ cup oil
¼ cup good quality honey
½ cup brown sugar
2 cups plain flour
2&1/2 teaspoons baking powder
1 sachet vanilla sugar
½ cup hot water
½ teaspoon cinnamon powder
½ cup crushed walnuts (I used ¾ cup), you can replace nuts with which ever nuts you like (I sometimes use pecans).
3 granny smith apples peeled and diced into small pieces soaked in juice of half a lemon
Top of cake
½ cup chopped walnuts
2 table spoons of brown sugar
¼ tsp cinnamon
Method
Preheat oven to 180c or if you have a good fan forced oven 160c
Line the base of a 22cm spring form cake pan with baking paper
Step 1: Bottom of cake
Peel and core apple.
Cut apple into quarters then slice them thinly.
Sprinkle brown sugar evenly on the bottom of the cake tin
Add water and mix and spread all over the bottom of the cake tin.
It will spread in blotches, that’s fine.
Arrange the apple slices in a circular pattern, so it covers the bottom of the cake evenly.
Step 2: Apple
Except for the apple soaked in juice, mix all the cake ingredients with a hand-held mixture just until the batter is nice and smooth and free of lumps (takes a couple of minutes).
With a wooden spoon mix in apple and lemon juice and pour batter over arranged apples.
Step 3: Nuts
Mix walnuts (or nuts of your choice) with sugar and cinnamon.
Sprinkle on top of cake batter.
Step 4: Baking time
Bake cake for approx 45-50 minutes or until skewer comes out clean from centre of cake.
Allow cake to cool down for 20min.
Turn the cake out upside-down on a cake platter, peel baking paper off gently.
Decoration:
Optional, for nut lovers;
½ cup chopped walnuts
1tbs of brown sugar
¼ teaspoon cinnamon powder (or according to taste).
Mix together and spoon mixture on top of the cake.
