Vegan muesli

As the mayhem and uncertainty continue, I am relieved to be able to escape into the creative world of cooking. And I’m super excited to reveal the winner of the muesli-cup competition. I just want to say, I am so glad it wasn’t up to me. Everyone who competed did such a great job at creating these beautiful breakfast cups.

However, a winner had to be picked and you guys made your choice very clear, in fact, you made it 26 times very clear. I am pleased to announce the name of the winner is Eliana Piazza!

The prize for this competition is a complimentary hair cut, wash and blow-dry by my very talented and generous hairdresser, Donna, from Hair by Donna. Donna is local and she is a fantastic hairdresser and colourist. I would like to say a huge thank you to Donna for her generosity and to all of you who have participated in the fundraising and muesli-making breakfast.

In the meantime, I have a phenomenal, crunchy cinnamon/vanilla muesli-base recipe for you. I deliberately chose to leave it plain for two reasons. 1. I wanted to keep it as simple as possible and 2. everyone has their own idea of what they would like to add. So feel free to add your favourite nuts and dried fruit. This muesli will keep for ages in a tightly sealed jar or the freezer. So if we may need to stay indoors for a while, this is a great go-to recipe to feed your family without any fuss.


  • 4 cups rolled oats

  • 1 teaspoons salt

  • 3 teaspoons cinnamon

  • 1/3 cup honey or maple syrup

  • 2-3 teaspoons vanilla extract

  • 1/2 cup of melted coconut oil


  1. Pre-heat the oven to 170c.

  2. Mix dry ingredients in a bowl, stir in the melted coconut oil, vanilla and stir in the honey.

  3. Transfer mixture onto a baking tray lined with baking paper and spread the muesli evenly.

  4. Cook on 170c for 20 min and let it sit to cool down before adding anything your heart desires.

  5. I added: toasted coconut flakes, cocoa nibbles, a combination of nuts and seeds and dried fruit.
