Cajun and honey salmon

I hope you're all doing awesome, I have had to take it a little easy hence the absence from social media, my Mr. L5, my rebellious bulging disc is causing me all sorts of trouble thanks to AGE, But don't worry i've got this. I've discovered the ultimate secret weapon against inflammation - the mighty salmon!

According to the all-knowing Google, salmon is not just your average fish; it's the nutritional superstar of the seafood world! If nutrients were superheroes salmon would be a whole squad of Avengers rolled into one finny package! We're talking Omega-3 for brainpower to rival Tony Stark’s, protein to pump you up like Thor's biceps, and vitamin B to keep you energized like Captain America on a sugar rush! (My husband is a comic book illustrator, what can I say!) But wait, there's more! It's got magical powers! It's high in potassium, so it can zap away cramps quick as Dr Strange. And with selenium on its side, it's like a magic spell against heart disease! Expecto inflammatus, no more inflammation! I've become a Salmon sleuth, researching, and eating so much of it, I might turn into one soon! My back issues don't stand a chance against this fishy crusade. Mr. L5 will wish he never messed with super salmon! Like any baddy squaring off against a genuine superhero, his days are numbered. Forget surgery - I'll handle this with four epic injections and my "Avo-engers assemble!" anti-inflammatory diet. I'm on a mission to show getting older doesn't mean you can't be a youthful, salmon-powered dynamo! As my beloved brother-in-law used to say, "Growing old is not for sissies!" So, let's show life that we're fierce, fabulous, and not backing down from a fight against inflammation, while tickling the tastebuds at the same time. This super salmon recipe is packed with flavour; sweet paprika for a surprise twist, cajun spice for an unexpected kick, a helping of honey to keep things sweet, and some freshly chopped parsley for that bit of culinary pizzazz! So, let's dive into this salmon adventure together! And remember, we might not be invincible, but with this swish fish dish, we're pretty close!


Ingredients

  • 1.5 kg salmon fillet or whole side of salmon

  • 1 tablespoon sweet paprika

  • 1 tablespoon Cajun spice

  • 2 tablespoons dried oregano leaves

  • 1/4 teaspoon salt

  • 3 cloves garlic, crushed

  • 300 ml freshly squeezed orange juice (strained)

  • Handful of chopped shallots (green part only)

  • 3 tablespoons olive oil

  • 1 1/2 tablespoons honey or maple syrup

  • 1/2 bunch parsley, finely chopped (for garnish)

Method

1. Preheat the oven to 200°C (390°F). 2. Place the salmon fillet or whole side of salmon in an oven dish lined with baking paper. 3. In a bowl, mix together the sweet paprika, Cajun spice, dried oregano, salt, crushed garlic, orange juice, chopped shallots, olive oil, and honey (or maple syrup) to make the sauce. 4. Pour half of the sauce over the salmon in the oven dish. Allow the salmon to marinate in the sauce for about 10 minutes before cooking. 5. Bake the salmon in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork. 6. While the salmon is cooking, take the remaining sauce and pour it into a saucepan. Over medium to high heat, bring the sauce to a boil. Then, reduce the heat to medium and let the sauce simmer until it thickens to a thick consistency. 7. Once the salmon is ready, either pour the thickened sauce over the top or use a basting brush to coat the salmon with the sauce. 8. Garnish salmon with finely chopped fresh parsley. 9. Serve the baked salmon with steamed vegetables, rice, or a fresh salad.
