Quinoa Breakfast With the Lot

‘Mum, I love you.’

‘Yes, darling, I love you too. So what do you want?’

'Gees, nothing, Mum, can’t I tell you I love you without wanting anything? ’

'No of course not, my love, but what did you want?’

‘I didn't want anything ... but since you are asking, do you think you can make me one of these quinoa breakfasts you make.'

‘Sure, darling, what would you like me to make it with? Do you want Fruit?’

‘Yeah.’

‘Nuts?’

‘Sure.’

‘Muesli?’

‘Yep, some coconut or peanut butter? Milk or yoghurt to eat it with?’

'Yes, thanks.'

'Yes to what?’

'To the lot! I want the lot, thanks, Mum.’

And that’s how Quinoa breakfast with the lot was born. I thought that it was a bit much but it sure tasted good! It seems that nothing succeeds like, excess when it comes to boys anyway. I love making breakfast and brunch. I enjoy eating at that time of the day more than any other and I wish I had more time to post a breakfast every week as well, but I just don’t have the time. But I will try to incorporate it more often.


Quinoa breakfast bowl with fruits, nuts, muesli, coconut, greek yogurt and jam
 

Ingredients

Serves 2

  • 1 cup quinoa

  • 1 cup milk of your choice, (i used almond milk)

  • 1/3 hot water

  • 2-3 orange and cinnamon teabag (caffeine-free), I used 3 bags

Topping

Below is the topping I used but feel free to use whatever topping your heart desires. The Muesli is a little sweet but nothing else has sugar or any kind of sweetener in it, so feel free to add honey.

  • 2 tablespoon peanut butter one smooth, one crunchy mixed with 1 tablespoon milk

  • 3/4 small tub Greek yoghurt mixed with 2 tablespoons Nava’s strawberry homemade jam.

  • 1 banana chopped

  • 1 tablespoon desiccated coconut

  • 4 tablespoons muesli

  • 1/2 kiwi fruit

  • 6 strawberries cut in half

  • 1 fig cut in half

 

Method

  1. Pour 1/3 cup boiling water into a cup with two tea bags, let sit until it cools down a little.

  2. Into a pot pour the milk, the prepared tea and quinoa and bring to the boil, reduce heat to simmer and cook for 20-25 min or until liquid has been absorbed.

  3. Divide the quinoa into one or two bowls depending on how much you can eat, pour milk or more tea until desired consistency.

  4. Add toppings and enjoy.
