Caramel mud cake

Hello to all you wonderful chefs, I am so sorry it has been sooo long but i have been busy with preparations for my nephews wedding and my sons wedding.

I hope you have all been keeping well, healthy and happy.

My son and his fiance have just had their first wedding celebration. Yes, so nice they have to do it twice!

The first wedding was a civil ceremony held at my brother's house with family members and a handful of friends. It was a beautiful relaxed afternoon affair, filled with music and joy.

The second wedding will be held in Israel with about 200 guests in a religious ceremony, and I can't wait to go.

But for the first wedding, which was a small and intimate occasion, I made several cakes. I'm going to share the recipes for them right here on my website starting with the wedding cake: a decadent, sweet and moist caramel mud cake but before I do a quick wish to the bride and groom.


The minute the Levy’s and the Boses met Shira we all knew she was special.

I remember Ari thought it would be a good idea to bring her to Shabbat dinner to meet the family.

Shira, unintimidated, walked in poised and flashing that beautiful smile of hers. She looked radiant.

Within minutes she had us eating out of her dainty little hands. it was unanimous. All 27 family members fell in love with Shira,

I mean what’s not to love, smart, non judgmental, sees the good in everyone, Shira is a breath of fresh air.

And as for my son, a wise, thoughtful young man who will go out of his way not only to help family and friends, which he has done over and over again, but strangers too.

Ari has this magnetic personality that makes the mundane fun and turns a stranger into a friend.

A talented singer/ song writer, he also runs a successful music production business while Shira, a Pilates instructor, runs a successful studio. Both help others to reach their potential whether in physical strength or by bringing out the best in their music. Together they’re a loving, strong force bringing out the best in each other.


For their wedding cake I chose to make this caramel mud cake extravaganza, to symbolise how sweet their lives together are bound to be. It will be rich in love as the cake is with its butter and cream cheese icing. This is a solid dessert, but the solid foundation you have laid down for life is even more substantial. Otherwise you’d break your teeth on the cake!

The beautiful bride


Ingredients

2 eggs

200g firmly packed dark brown sugar

150g plain flour

150g self raising flour

3 teaspoons vanilla extract

200g white chocolate at room temperature

200g butter at room temperature

1 tablespoon golden syrup

180mls hot water


Method

Depending on how hot your oven gets pre heat the oven to 160C or 180C (mine needed 180C)


Line 2 round 20/21 cm cake tins with baking paper and set aside and start to prepare the cake.

Please note, you can make double the quantity or make one quantity at a time. I make one at a time.

In a saucepan, over low-medium heat, place the butter, white chocolate, dark brown sugar, golden syrup, vanilla essence and hot water and stir until all the butter and chocolate have melted and the mixture is smooth.

Remove sauce pan from heat and allow to cool down.

Sift plain flour and self-raising flour together.

Using a handheld mixer (on low- medium speed) add eggs one at a time, then the sifted flours.

Mix until there are no lumps, roughly 2 minutes.

Pour cake batter into prepared tin and bake for roughly 50min or until skewer comes out clean.


Butter and Cream cheese icing

Please note, if you want a thicker icing consistency just add one cup of Icing sugar.

You can make the icing the day before and keep it in the fridge in a bowl covered in plastic wrapping.

When you are ready to use take the icing out of the fridge about 10min before use.


Ingredients

226g cream cheese, room temperature

86g Unsalted butter, room temperature

3 cups pure Icing sugar

1 tsp vanilla extract

1/8 teaspoon salt


Method

Sift the icing sugar so there are NO LUMPS!

Beat the cream cheese and butter in a large bowl of a standalone mixer, beat until well combined and lump free.

Add the vanilla extract and salt and stir to combine.

With mixer on low, gradually add icing sugar until thoroughly combined and smooth.



Using a serrated knife, gently cut the dome off the top of each cake.

Grab a spoonful of icing and spread it in the centre of the desert dish that you are going to use.

Place one of the cakes on top, the icing will keep the cake in place. Spread about 4-5 heaped tablespoon of the icing on top of the cake then place second cake on top.

Cover cake with the remainder of the icing. I used fake flowers to decorate the cake on top. That way I could keep the cake in the fridge and the flowers didn’t die.
