Pineapple and coconut cake
I made this moist yet light pineapple and coconut cake for my partners birthday. I topped it off with the most delicious passion fruit curd, smooth and sweet with an intense tangy flavour. This is a seriously delectable cake.

For your birthday I made you a coconut and pineapple cake topped with passion fruit curd.
a delicious mixture of sweet and sour, reflecting a passionate life filled with sweetness and sour, I used nuts to represent the tough times you’ve been through but instead of keeping them in their original hard texture, i chose to use the one that has been grounded to a soft texture. Pineapple for its tough exterior for you have certainly had to be tough and it’s sweet fruity flavour to represent what’s in your heart.
