Olive and walnut salsa

Good morning my lovelies, I hope your week is sunny and bright On Saturday my home was filled with the warmth of my family as we got together for a picnic. Lately, I've been in a bit of a quiet space, neglecting the practice of gratitude in my daily life. So after my family left. I made a conscious choice to embrace gratitude (almost guilt free). This morning, I woke up appreciating everything in my life. And I hope you will feel an appreciation for the simple things in life too when you make this delectable side dish with it’s vibrant colours and celebration of flavours. With a tangy dance from the lemon juice and a subtle sweetness from the gherkins, combined with a satisfying crunch from the walnuts, this dish is a delightful symphony for your taste buds. Beyond its taste, this dish is wholesome, gluten free, vegan and .nourishing. enjoy


  • 1 cup olives (1/2 green, 1/2 black), roughly chopped

  • 80g tiny tomatoes, cut in half

  • 35g gherkins sliced

  • 50g walnuts, roughly chopped

  • 1/3 cup olive oil

  • 1 tablespoon lemon juice

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon pepper

  • Handfull of basil leaves finely chopped


Mix everything together until well combined.
