Lately, I've been in a bit of a quiet space, neglecting the practice of gratitude in my daily life. So after my family left. I made a conscious choice to embrace gratitude (almost guilt free). This morning, I woke up appreciating everything in my life. Ingredients:
1 cup olives (1/2 green, 1/2 black), roughly chopped
80g tiny tomatoes, cut in half
35g gherkins sliced
50g walnuts, roughly chopped
1/3 cup olive oil
1 tablespoon lemon juice
1/2 teaspoon sea salt
1/4 teaspoon pepper
Handfull of basil leaves finely chopped
