Just love my weekends, the weekdays are so busy with work and I’m an extrovert who enjoys other people’s company. So when the weekend comes around I love to spend time with my family, friends and socialising. Throw in a celebration and I’m in heaven. My nephew’s Bar mitzvah was last weekend and we started the celebrations on Friday night with a beautiful meal and music and of course a celebratory cake to complete the meal. I wanted to say happy Friday everyone, but I can’t pretend, the devastating fires that are burning day and night aren't heartbreaking and I never thought I would want it to pour on a summer’s day. My heart goes out to all the people affected by the fire and to all the amazing firefighters/heroes I salute you, you are doing an amazing job. Yesterday we celebrated my good friend Avi Sharabi's birthday and I was going to make a mouth-shaped birthday cake, because if anyone can talk as much as me (and that’s saying something) it’s my dear friend Avi. Ingredients Bottom of cake 1 large granny smith apple 1-2 tablespoon brown sugar 1-2 teaspoons water ¼ teaspoon cinnamon powder Cake 3 eggs ½ cup oil ¼ cup good quality honey ½ cup brown sugar 2 cups plain flour 2&1/2 teaspoons baking powder 1 sachet vanilla sugar ½ cup hot water ½ teaspoon cinnamon powder ½ cup crushed walnuts (I used ¾ cup), you can replace nuts with which ever nuts you like (I sometimes use pecans). 3 granny smith apples peeled and diced into small pieces
